Sugars form simple carbohydrate molecules like monosaccharides while starches form more complex carbohydrates linked together by different bonds. Sugar molecules cannot be digested further while starches are further broken down in the mouth before being passed on into the body. Being a simple sugar and quick energy source, sugars have a much sweeter taste while starches are not commonly sweet.
