Conversion of an amorphous solid into a crystal is a non-equilibrium process. The reason why the conversion occurs (if it does occur) is that the crystal has a lower free energy that the amorphous solid. There is no general rule about how rapidly this process will happen. It is sometimes true that crystallization will proceed rapidly once a crystalline nucleus is formed. However, there are many glassy materials which are very stable, and hard to crystallize.

You allow them to diffuse around and find more highly ordered configurations that lower the free energy. Diffusion is (typically) an activated process, so you need to either lower the activation energy to move or increase the temperature.
