because in a saucer it increase the surface area and hence evaporation take place faster
and evaporation causes cooling

increasing the surface area is one of the factors of increase in evaporation..if we drink tea from saucer the surface area increases and so does evaporation..and evaporation causes cooling .

the surface of hot tea in the saucer is more than in a cup. because of a large surface area cooling will be rapid in a saucer than in a cup.
