In the distillation process the hot weather is condensed by passing through the condenser.
The running water absorbs heat and the vapour gets condensed.
Cold water is Run from the lower side so that it stays for longer interval of time in the jacket and thereby absorb more heat from the vapour and causes its condensation into liquid state.
