When the bread changes colour it is usually due to the presence and growth of bread mould, most commonly the Rhizopus species, belonging to the kingdom Fungi. Fungi thrive in dark, moist and warm conditions, which is why bread will be become mouldy, more rapidly during the rainy season. During the rainy season, the air has a higher moisture content, which is ideal for fungal growth.
