Why ionic bonds are not known as true bond

this is because when 2 elements react to form an ionic bond, then only the electron exchange takes place but no actual molecule formation takes place as the ions formed are tend to live in native states while a true bond is a bond where the reacting elements join together permanently I.e. covalent bond or where sharing of electrons takes place.
