Iron ships don’t sink because, on the inside, they are filled with air. Despite the fact that iron is heavier than water and you would expect iron to sink, the air trapped in the middle reduces the average weight of the whole structure to less than that of the same volume of water, and hence the structure floats.
Now, if the air in the middle is replaced by water (maybe by a hole in the iron hull) then the average weight will now become heavier than water (water plus iron is heavier than water alone), and the iron ship sinks.
