milk skin or lactoderm refers to a sticky film of proteins that forms on top of milk. cream is the protein of the milk which is rich in fat. whenever milk is stored undisturbed for a long period time in a container , there is a tendency of fat to rise on the top and form cream layer as it is the lightest constituent.
