Why is acetic anhydride better than acetic acid in acetylation?

Acetic anhydride is a colorless, mobile, combustible liquid with a pungent acetic acid odor. It is primarily manufactured for captive use in production of cellulose acetate and related products, but is also marketed as a >98% purity reagent, for example, used in manufacturing pharmaceuticals.
