Brinjal is a food that belongs to the vegetable family. Brinjal is not a herb. It needs to be grown and preserved with moisture.
While growing herbs water is needed but while preserving herbs, there is absence of water.
Thus due to this reason Brinjal is a vegetable and not a herb. Herbs are used for seasoning in foods. Whereas Brinjal is a food in itself.
