why is caesium iodide insoluble in water?

In CsI, the constituent ions are Cs+ and I-. Both these ions are large in size, as a result of which their hydration enthalpy is small. Lower is the hydration enthalpy, lower is the solubility of the salt. Hence CsI has lower solubility in water.
