Cancer are incurable due to many reasons.

Firstly The cancer cells are hidden from our immune system,so our immune system never knows where are exactly cancer cells are.Secondly the cancer cells travel from one end to other end of our body,so it gets difficult for our immune system to detect them.And mainly they can defend against our immune system.They have this habit to develop themselves against our immune system, if in case our immune system detects them.
