Why is curd an important ingredient in making rava idlis and bhaturas?

Curd is an important ingredient in rava idli and bathura for the following reasons:
1)curd contains several micro organisms including lacto bacillus bacteria.
2) for fermentation process, curd is added to make idlis and bathura soft and spongy
