Why Is difficult to cook in open vessel at hill station?

Due to higher altitude at hill station, atmospheric pressure is low. Hence, water boils at lower temperature and rate of reaction decrease. Therefore, it takes longer time

As the pressure decreases with height . Low pressure contributes to low Boiling Point and hence the water turns into vapour in short time and it becomes difficult to cook with open vessel.
