Because in diffusion, every cell needs to be in the connection of atmosphere. But in multicellular organism, it is not possible.

Diffusion is a slow process which takes longer time for transport nutrients, gases like oxygen and carbon dioxide, blood. But in multi cellular organisms, transportation needs to faster for fulfill the requirement of every cell. that's why, multi cellular organisms have their own complex organ system.
