Because they don't have a multicellular body so all of the work is to be completed by the one cell only, so for catching the food from its surrounding diffusion is the best way.

Diffusion being a very slow process in which molecules transfer from higher concentration to lower concentration,it is not sufficient for transportation of substances in plants and animals.
But diffsion is sufficient in lower organism/unicellular organisms mainly due to their microscopic size, being very small diffusion is comparatively fast,as there is less distance to travel/transport.
Secoundly most of the body of unicellular organisms are exposed to the surrounding hence diffusion can easily occur.
Moreover, diffusion needs less energy to work which can be provided by unicellular organisms.
