Why is dry ice stored under high pressure?

dry ice is solid CO2. It is obtained by liquifying CO2 and is stored under very high pressure.if the pressure is released it would sublime back to its original form. it is useful for preserving frozen foods, ice-cream etc. where mechanical cooling is unavailable..
