Earthenware is preferred more as compared to metal ware for cooking and storage for the following reasons

1) In villages the food is cooked over wooden fire ( Chullahs) that do not give effective and fast controlling over heat transfer ( as in case of gas or electricity) earthenware transfer heat slowly as compared to metal ( metal being very good conductor of heat) hence food cooked in an earthenware over wood fire did not get burnt and cooks evenly.

2) for storage earthen wares are better in villages as in villages facilities of refrigeration is limited, earthen wares are porous and evaporate water from its surface maintaining a low temperature there by preventing spoilage of food
