why is equality considered to be the core oof democracy?

Good question and let me look at it from a political rights view and not monetary equality, because that is a completely different question.
Democracy was born out of the very idea that people, ordinary people should have the right to govern themselves, and choose their own leaders and law markers, instead of Kings, Queens and Lords making all the decisions for them. This is because in a Royal kingdom, the Kind is always above the law, while ordinary people have a very different set of laws.
Democracy means that everyone is ruled, governed and even punished on the same law, so no law maker, king is above the law.
If people are not punished or abide by the same laws in a government, is not considered a working, stable democracy. There are many such instances all over the world.
