why is fermented food warmer in temperature????

When temperatures exceed 70°F (20°C), fermentation happens quickly. The bacteria that feed on pectin are more active, causing vegetables to break down into softer textures.

fermented food is warmer in temperature becoz carbon dioxide gas is being released due to the process because of which temperature of the substance increases......
