The price of 10g of gold is around $450. So we need a lot of accuracy(to milligrams) in calculating exactly how much we are weighing. Spring balances aren't all that accurate and cannot provide us with as many decimal places as we'd like. So more sophisticated/sensitive/accuracy have to be used in case of measurements related to gold.

which varies from place to place that is why the spring balance is not taken to measure the gold as it is a very costly thing and do it may be different in different places of the earth so in order to measure gold spring balance is not used...
