→If the grain is wet then sometimes there is a chance of microbes attacking it .
→We know that , sambar spoils in a day due to moisture content (water) in it .
→Here the same happens .
→So , whenever farmers get grains , they dry it them store it .
→They will either store them for next plant ir they will sell off in market .

Grains are dried before storing because during storage They insures that their should be no germs or microbes are present. and secondly they insure humidity level by drying them.
