Why is graphite used as an electrode in batteries?

Graphite or "graphite paste" is used for electrodes because a) it is conductive b) it is inexpensive c)  it can continuously expose a "fresh" surface.  I'm not sure if you want to call brushes for motors "electrodes" but, for that purpose, carbon's low coefficient of friction is a plus.
