They're hard and strong, take a good polish, and not easily weathered by rain. They're also usually isotropic, unlike many sedimentary and metamorphic rocks that have different strengths in different directions.
Their strength and hardness can also be a drawback though, in that it makes them harder to cut. Sedimentary rocks are also widely used as building materials; they can be easier to work while still being strong enough, and can also look good. Metamorphic rocks are perhaps less used structurally, but slate is popular for roofing as it readily makes flat pieces.
