It is difficult to cut vegetables with a blunt knife because as the knife becomes blunt the surface area of its edge increases resulting in decrease of pressure applied Therefore vegetables are not very easily chopped by a blunt knife.
In addition, to make the knife easily chop the vegetables we decrease its edge's area by sharpening it.
