Why is it necessary to write scale and kink(sometimes) in a graph??

Without the scale no one will be able to understand what type of graph it is and could not know the values of it. Kink is used if suppose a graph is starting from 50 on X axis and after that is 60 , 70 and so on, then Kink is used to make us understand that the graph is starting from non uniform position

When the scale on x-axis doesn't start from zero , then kink is used.
