Salts and edible oils are added as preservatives in pickles to check the growth of micro organisms and prevent them from attack of microbes whereas microbes can easily grow on fruits and spoil them.

Mango pickle does not soil for a long time because it contains salts and
Edible oils which acts as preservatives and prevent the growth of microorganisms. Whereas, mango as a fruit for does not contains salt
Or oil which acts as preservatives
That's why it get spoilers after a few days.....
