The stomata may be open or closed. The guard cells regulate the opening and closing of the stomata.

The stomata are openings on the plant leaf.

They are surrounded by guard cells.

These guard cells control the opening and closing of stomata.

When the guard cells are turgid the stomata open.

When they are flaccid the stomata remain closed.

This is facilitated by osmosis.

When the leaf is placed in water ,the guard cells draw water by osmosis into their cytoplasm making the cells turgid.

This keeps the stomata open and also the leaf remains alive for a longer time.

This is the reason why we put leaf peel in water.
