nitrogen is filled in sealed packet food items such as chips so that oxygen can't occupy any place and decrease the crispness of chips.

This is because nitrogen prevents the chips from rancidity, whereas if chips come into the contact of oxygen they get oxidised and their taste changes and produces foul smell from chips. So thats why , nitrogen is filled in the packets of chips in order to prevent them from becoming rancid.
