that is because nitrogen is gas which does not make food to spoil and it is make germ free because no germs or bacteria can servive in nitrogen and these leads to stay safe for a longer time for food

Oil preset inoily things like chips undergo oxidation with time and spoils the food. To prevent this , chips are flushed with nitrogen to reduce the reaction of oil with oxygen.
