Unlike oxygen ( an oxidising gas),nitrogen is inert. Nitrogen inhibits the growth of aerobic bacteria,which in turn,helps elongating the shelf life of the chips. Also,the cushion of nitrogen prevents the chips from being crushed while they are transported in bulk from the factory to the stores.
