The mixture of the iodide and phosphoric(V) acid produces hydrogen iodide, which reacts with the alcohol. Phosphoric(V) acid is used instead of concentrated sulfuric acid because sulfuric acid oxidizes iodide ions to iodine and produces hardly any hydrogen iodide.
