When cheese makers or people in authority design nomenclature, unless some one qualified sees the processes and put this cheese in proper category, it would have gained the right place in the cheese variety.
This cheese belongs to fresh cheese category, unripened close to south american cheese called queso blanca or queso freshca, must mention that it is acid coagulated which cheese expert understand it not melt able but it can be heat treated in recipes and making Bengali sweets.
