Moisture can affect the plaster of Paris by slowing the setting of the plaster due to hydration, it should be stored in a moisture-proof container. Plaster of Paris is calcium sulphate, and when water of crystallization is added to it, gypsum is formed, which is a hard material.

hope it helps !!
