Small intestine in herbivores is longer than that of carnivorous because you know that the herbivores feed on plants and small intestines function is to absorb undissolved substances.

so,

as the herbivores feed on plants, their food contain roughage and cellulose in very high amount that can only be converted into simpler substances for digestion by small intestine.

Hence, greater the length of small intestine, greater the absorption of minerals.
