Sodium is high reactive element. If it is kept in open it can explosively react with oxygen to catch fire. Hence to prevent accidental damage sodium is immersed in kerosene oil.

Sodium and Potassium are highly inflammable metals, when kept in open air they catches fire. That is why they are kept in kerosene oil because no air can cross the layer of oil. So there is no chance of any flame in there.
