Sodium nitrate is an inorganic sodium salt having nitrate as the counterion. Used as a food preservative and antidote to cynide poisoning. It has a role as an anti-microbial food preservative,an anthypertensive agent, a food antioxident, a poison and an antidote to cynide poisoning.
