Squamous epithelium is not present in small intestine because the layer on small intestine contain villi which is not associated with the squamous epithelium.
In other words squamous epithelial tissue don't provide absorbtion. Since, small intestine is associated with only absorbtion and assimilation it don6 requires tissue like epithelial tissue.
