Curd is produced by bacterial fermentation of milk. The starter is added to milk in order to make the milk curdle. The starter contains lactobacillus bacteria which digests the lactose sugar in the milk and releases lactic acid which causes the milk to curdle, and gives it the characteristically sour taste.
