If you skip subject, be cool with the letter not being read. A subject lets you know the gist of the letter as a whole.

In formal letter subject is written as editors or principal and etc have a busy life and by reading only the subject they can understand what is the main problem or topic and this will not make them boring also instead of reading the whole letter
