We know that potato chips contain oil. When they are left to the exposure of oxygen for a long term of time, they react with oxygen and become rancid.
Once a food becomes rancid it cannot be consumed as it degrades the quality of food. This process is known as rancidity.
To avoid chips contact with oxygen (i.e. to prevent them from becoming rancid) the packets of chips are flushed with nitrogen gas.

Heya,
Nitrogen is a very god anti-oxidant.
It do not react with nitrogen.
So foods containing oils and fats are generally flushed with nitrogen gas to avoid oxidation which leads to rancidity.
