Why is the Baking soda used in the preparation of cake, biscuit,dhokala ? What does happen again exactly?

Baking soda is used for making for all these because carbondioxide which is liberated during making of these dishes causes them to rise and liberated out through the pores we can see on dhokla,biscuits,cakes,etc

Baking Soda is used in the preparation of cake,biscuit,dhokala etc. to make them flupy and spongy.

Actually when baking soda came in the contact with an edible mild acid then it reacts to form baking powder along with the evolution of carbon dioxide gas. This evolution of carbon di oxide make the food products spongy and tasty.
