why is the digestion of food considered a slow digestion?

It is considered as slow digestion because our body and enzymes partially digest food and then after some time another enzyme digest the same food to complete the digestion. Whole digestion in a human body completes average in about 6 hours and
this is slow. That is why it is considered as slow digestion.
