Why is the distance between stars expressed in light years? What do you
understand by the statement that a star is eight light years away from
the Earth?​

Distance to stars is expressed in light years because they are extremely far away from earth and using low units like metres or kilometres is inconvenient.

The statement means that light takes 8 years to travel from the earth to the star.

because as know very well very long distance can,t be measure with help of km, m, whatever that but one of the way that can be measure easily way that is called light year . because light year able to measure distance between earth to star whatever that so very long distance (like as distance b/w star and earn ) so expressed as light year. because take a time to cover distance as year.
