Metal conduct heat so you would not be able to use the handle.
Ceramic is a tricky too. It will heat slowly but will actually heat… and take a long time to cold.
Most natural material are costly. Wood is sometime used. It does not age too well but makes it look good.
Plastic is cheap and good at keeping heat away.
Beware it is not “any” plastic. Most handles are made in a composite of Polyamid 6 or 66 (Nylon) and short Glass Fiber. This composite is very good at holding high temperatures. Manufacturer may still use injection molding, making it a highly cost effective solution. Some are made with thermosetting plastics like Bakelite, with higher manufacturing costs.
