why is the heating in the Benedict's is test and Millon's test carried out in a water bath?

These tests are not carried outside water. This is because the contents of the test tube will spill out if it is directly heated outside.

In lab, Benedict's reagent need to test for single specific reducing suga namely, glucose.

Benedict's reagent comes as  aqua-blue.

When  heated in the presence of reducing sugars, colour  turns yellow to orange when  "hotter" which is the final colour of the reagent.

The  the higher the concentration of reducing sugar.

Reducing sugar is oxidized when wormed condition on heated with Benedict's solution,indicates  the sugar looses electrons.

Benedict's solution contains copper sulphate.

The copper ions instantaneously react with oxygen to form copper oxide as a reddish brown precipitate.
