This is because of the presence of large vacuole in plant cells coupled with the rigidity of the surrounding cell wall. As the vacuole and the nucleus cant occupy the same space the larger vacuole simply pushes the nucleus to the side until the nucleus is pushed up against the rigid cell wall.
