The process which involves the growth of the fruit is called as ripening of fruit. In this process, the color and the texture of the fruit is changed.

The fruits do not taste good when they are green, where the acid level of those fruits are high.

For example, the ripening process of the tomato involves, green, breaker, turning, pink, light red, and red.  

Only some of the fruits undergo ripening process, example, banana, apple, and so on. Some of the fruit does not undergo ripening process, for example, strawberry, coconut, and so on.

During ripening the pigment present in the skin of the fruit changes and this can not be reversed back. it is a chemical change as once a fruit ripens it cannot turn raw again. The properties of the raw fruit are different from the properties of the ripe fruit.
