why is the steering wheel in the car smaller than that of in truck​

Bigger wheel = more leverage

1) Reduces the amount of assistance the power steering system must provide. A smaller pump under a smaller load will reduce cost and maintenance.

2) If you were to ever lose power steering, you'd need a lot of force to turn those wheels. A bigger wheel would give you more leverage and make that task easier than a smaller wheel.
