Because the 1857 revolt had a way wider scale than those conflicts. While Tipu Sultan certainly was a big threat, other resistances were uncoordinated and smaller in nature.British historians called it as Sepoy mutiny and Indian historians called it Revolt of 1857.

The Revolt of 1857 is called “The first war of Indian Independence ” bcoz it was the first time when Indian military declared Bahadur Shah Zafar the Mughal Emperor Of India and brought rulers of other different provinces on their side to launch a combined agitation of all at an ALL INDIA LEVEL in 1857.
Earlier to 1857 various tribes separately used to launch an agitation at very small level or local level that was very easily used to be crushed by British Army.But in 1857 the agitation was at such a high level that the Governor General(in 1857) Lord Canning said that if Scindias of Gwalior would have also aroused against them then they(Britishers)would have to pack up their bags and rolls from India at that vry same moment.
This Revolt was just the outcome of harsh British policies like Doctrine of Lapse,British interference in religious and social activities,etc
